اثر حجم دهنده‌های رژیمی مختلف غنی از فیبر بر ویژگی‌های کیفی فیله‌های گوشت گاومیش بازساخته فراسودمند

چکیده

پیشینه: بازار روزافزون محصولات گوشتی فراسودمند که به ویژه توسط مصرف کنندگان امروزی آگاه به سلامت تقاضا می‌شود، محققان را بر آن داشته است تا محصولات گوشتی سالم‌تری را تولید کنند. هدف: مطالعه حاضر با هدف بهبود فیبر رژیمی گوشت گاومیش، با استفاده از حجم ‌دهنده‌های غنی از فیبر رژیمی فراسودمند طبیعی انجام شد. روش کار: گوشت به ‌دست ‌آمده از لاشه گاومیش ماده بالغ (بیش از 10 سال) از بازار محلی طی 5 تا 6 ساعت پس از کشتار تهیه شد، به مدت 24 ساعت نگهداری شد و سپس با حجم دهنده‌های غنی از فیبر در مقادیر بهینه آن‌ها یعنی 12% آرد جو، 12% آرد ذرت، 10% پودر پوست نخود و 8% سبوس گندم برای تولید فیله‌های گوشت گاومیش بازساخته فراسودمند (FRBMF)، فرآوری شد. نتایج: نتایج نشان داد برای اکثر نمونه‌های تیمار در مقایسه با گروه شاهد، بازده پخت، pH و محتوای رطوبت بالاتر اما درصد پروتئین و چربی کمتر بود. درصد خاکستر FRBMF تهیه شده با سطوح بهینه پودر پوست نخود و سبوس گندم به طور معنی‌داری بیشتر از گروه شاهد و سایر تیمارها بود (P<0.05). مقادیر نیروی برشی برای FRBMF کمتر از گروه شاهد بود. درصد فیبر رژیمی کل (TDF)، تمامی محصولات تیماری به طور معنی‌داری بیشتر از گروه شاهد بود (P<0.05). آنالیز پروفایل بافتی تفاوت معنی‌داری را بین FRBMF و گروه شاهد نشان نداد (P>0.05). امتیازات حسی برای بسیاری از ویژگی‌های FRBMF ترکیب شده با سطوح بهینه پرکننده‌ها، کمتر اما قابل مقایسه با گروه شاهد بود. نتیجه‌گیری: نتیجه‌گیری شد که عملکرد (کارایی) محصول به خصوص از نظر فیبر رژیمی کل نسبت به شاهد بهبود یافته است. پودر پوست نخود و سبوس گندم منابع عالی برای فیبرهای رژیمی و پس از آن‌ها به ترتیب آرد جو و ذرت هستند.
